Enzyme Assays

 Enzyme assays measure either the disappearance of substrate over time or the looks of product over time. Multiple methods have been developed to measure the concentration of substrates or products in a reaction, but all enzyme assays fall into two types: fixed-timed and continuous. Enzyme assays are important tools for measuring cellular activity and for monitoring enzyme protein while it's being purified. Serum is employed for several enzyme assays because the preparation of plasma requires the addition of anticoagulants (e.g., chelating agents) that interfere with some assays, and elimination of fibrinogen, which can form aggregates that interfere with activity measurements.
